We make time for many things but we cannot put our lives on hold to lose weight and that’s why quick easy diet recipes are the keys to success. Simple healthy ingredients prepared in a way that preserves the essential nutrients and delivers satisfying taste and texture. I for one am long past the days of spending hours in the kitchen
We all have our favorites to fall back on when the waistband gets a bit tight. Mine are fish recipes and anything with avocado.. so good for the skin. We love soups too and enjoy experimenting.
When I injured my knee some months ago and couldn’t exercise I realized that I was piling on the pounds. I began thinking about women who cannot exercise or not so rigorously and wondering how they lose weight. I had maintained my weight until then largely with exercise.
Boomer Diet Boot Camp was born!

Food, tastes and ingredients vary so much around the world. I am not a “super cook” but when I posted my favorite recipes lots of you tried them and left me messages saying it was so good to try something new.

Wanted! Your favorite easy diet recipes. At 60 plus we are all in the same boat when it comes to gradual weight gain so your safe weightloss tips could be invaluable to someone else.
Here are two I use a lot and below them you’ll find a very simple form to send me your favorite recipe for healthy diet food. I look forward to it!
Wilted Spinach with Lemon and Garlic
This is a deliciously fresh way of serving 3 of nature’s super foods. It goes beautifully with fish, prawns, turkey, chicken or other veggies!
3 tablespoons of olive oil
3 garlic cloves chopped
500g baby spinach
1/2 lemon juice and zest
1/2 lemon in wedges
Prepare the juice and zest of half a lemon and cut the other half into wedges.
Heat the olive oil in a wok and cook the chopped garlic until sizzling but not browned. Add the baby spinach leaves and toss for approximately 1 minute until wilted. (you may have to do this in 2 batches)
Transfer to bowl and toss with lemon juice and zest and serve immediately with the lemon wedges.
Spicy Chickpeas with Zesty Cod
You can use any white fish and canned chick peas if you like. They still retain the precious Vitamin E.
250g baby spinach
1 red onion sliced thinly
4 medium sized cod filets
1 lemon zest and juice
dried chilli flakes
Heat up the grill and line a dish with foil.
Mix 1 tablespoon of olive oil with the zest of the lemon and brush over cod filets. Grill until cooked, about 7 minutes.
While the cod is cooking heat 2 tablespoons of oil in a pan and fry the onion until nicely golden. Add the spinach and garlic flakes and toss gently until wilted. Add the chickpeas and lemon juice and warm through. Serve the fish on a bed of spinach with a drizzle of lemon and/or olive oil and fresh black pepper.
