Diet Soup Recipes
These diet soup recipes are warm, tasty,
filling and above all nutritious. So when it’s lunch time and we’re looking for something
comforting and quick you can whizz one up in a flash!
The options are perfect dieters soups, low on the GI
index so they keep you fuller longer.
They are uncomplicated and can be varied with the herbs and spices you
like best. Cook a large batch and eat the rest
tomorrow or just add crusty bread or potatoes for the rest of the
family.
Remember these ingredients are loaded with fiber and bursting with
essential nutrients to boost your metabolism and help melt away those
extra pounds. Make it your goal to eat double your normal veggies and
try some new ones! The best anti aging tip I know!

Tomato, Zuccini & Carrot Broth.
- I Zuccini
- 500 grams of tomatoes peeled and diced or a tin.
- 3 medium carrots
- 1 medium onion
- 1 clove of garlic
- I chicken stock cube
- 1 tsp ground coriander
- Fresh chopped cilantro
- 1 small potato diced very small
- A little olive oil
Gently fry the
onions and garlic until soft and add coriander.
Add the stock and tomatoes along with the chopped carrots, potato and
zucchini. Bring to the boil cover and
cook gently for about 15 minutes. Pop in
the cilantro and cook a few minutes more.
Blend and serve in a warm bowl.
Spinach & Leek with
Almonds
- A little oil
- 1 leek in finely cut rings
- 500g of baby spinach
- 200g peas (frozen)
- 600 ml vegetable stock
- 50ml white wine
- Freshly grated nutmeg
- Juice of a lemon
- 2 large spoons of flaked almonds
Take a large pan and gently fry the leek. Add white
wine and cook a few minutes more. Wilt
the spinach on top then add the peas and stock and cook gently for about 8 minutes.
Whizz the soup in a blender, add lemon juice, nutmeg and seasoning and top with lots of flaked
almonds.
Lentil Soup With Spicy Red Pepper
This recipe I found in the Woman & Home magazine.
They say you can eat it hot or cold pureed over ice cubes without the
joghurt. It’s my favorite diet soup
recipe because it’s spicy and comforting when I’m really hungry!
- 200 g of red lentils
- A little olive oil
- 1tsp smoked paprika
- 1tsp crushed chillies
- 2 cloves of garlic
- 1 liter of vegetable stock
- 1tsp sherry vinegar
- 1tsp caster sugar
- 4 tbsp natural joghurt
In
a sieve rinse the red lentils, then leave them to soak in a bowl of cold water
whilst making the rest of the soup.
In
a large pan, gently heat the oil and fry the onion until soft. Add the garlic
and red chilli for 2 minutes and then the sweet smoked paprika for a final
minute along with a slash of water to protect the spice from burning.
Add
the red peppers to the pan and cover for 10 minutes until beginning to soften,
stirring occasionally. Drain the lentils and add them to the pan along with the
vegetable stock then cover, bring to the boil and simmer for 15 minutes until
the lentils begin to break down.
To
give the soup some texture, reserve one third of the soup before blending the
remainder in a food processor until smooth. Stir the smooth liquid back into
the chunky pepper and lentil soup then season to taste adding the sherry
vinegar and caster sugar. Divide between four bowls swirling a tbsp of natural
yoghurt through each.
