Grilled Salmon with Lemon Pesto
My favorite because I love salmon!
2 Salmon fillets
small bunch of parsley
2 large tbsp lemon juice and some zest
1 small clove of garlic
1 tbsp olive oil
small handfull of pine nuts
2 drops of Truvia
Preheat the grill
Place all ingredients in a blender and whizz in short bursts to achieve a course paste.
Spread onto salmon filets and grill until the salmon is cooked through.
Serve with steamed green beans, broccoli or a green salad.
I have also used almonds and walnuts in this recipe, tastes great too!
Nuts are a superb source of protein and help to keep you fuller longer. The salmon is rich in Omega 3 oils essential for our health and safe weightloss.

Chicken Stir Fry
This recipe is great because you can use almost any veggies you have in the fridge and dress it up with bean sprouts or spinach leaves as you like.
- 1 chicken breast cut into strips
- Soya sauce
- half a head of broccoli cut into florets
- handfull of snow peas
- courgette ribbons
Fry the chicken pieces in a tbsp of oil for a few minutes add a little water, cover and cook until almost ready. Remove from the pan and keep warm. Now cook the brocolli florets in the juice for about 5 minutes and then add the snow peas and courgette for a further few minutes. Put the chicken back in the pan with the veggies and warm through.
The stir fry is a really useful safe weightloss recipe. It can be cooked as much or as little as you like and varied with all sorts of herbs and spices. Serve with a little brown rice or on a bed of raw baby spinach.
